This great orzo dish can be a side dish or add some veggies or meat for a side dish. Makes a cozy bed for fish. Recipe serves 2, nutritional info is per serving
  • 6 oz Delallo Whole Wheat Organic Orzo
  • ⅓ cup Trader Joe's Light Coconut Milk
  • 1½ tbsp garlic, minced (Spice World canned is fine)
  • 1 tbsp Thai Green Curry Paste
  • Fresh or Dried Basil or Parsley to taste
  1. Boil orzo for 9 minutes
  2. Drain orzo, turn heat down to low and add the rest of the ingredients
  3. Allow ingredients to simmer for about 2-3 minutes until milk is almost completely absorbed
  4. Enjoy!
